My First Ever Meatloaf

















  • 2 grated carrots
  • 1 cup breadcrumbs
  • 1 cup Heinz tomato ketchup
  • 600g lean pork mince
  • 200g leftover roast beef
  • 100g spicy chorizo sausage chopped fine
  • 2 eggs, beaten slightly
  • 1 tbsp dried mixed herbs
  • 2tbsp butter
  • 1/2 cup chopped pistachios
  • 11/2 tsp seasalt
  • 11/2 tsp freshly ground black pepper

  1. Preheat oven to 350 degrees F.
  2. In a large heavy skillet cook the onion, garlic and carrot in butter, over moderate heat, stirring, for about 5 minutes.
  3. Cover and stir occassionally until the carrots are tender, about 5 more minutes.
  4. Stir in salt and pepper, tabasco and balsamic vinegar and 1/3 a cup of ketchup.
  5. Cook for 1 more minute.
  6. In a large bowl, combine the meats, eggs, bread crumbs, vegetables, pistachios and mixed herbs
  7. Form into a loaf and put into a rectangular baking pan with 2 inch high sides
  8. Cover loaf with a few squirts of ketchup!
  9. Bake meat loaf in oven for 1 hour.
